Beschreibung
Die Trauben kommen aus dem dem Lieu-dit "Le Poste", am Fuße der Kapelle von Saint Cosme. Der Boden ist reich an Kalk und Mergel, was für die Region sehr untypisch ist und eher an das italiemische Piemont und Barbaresco erinnert. Die Rebstöcke wurden 1963 gepflanzt, die Lese erfolgt manuell und der Ertrag liegt bei 20 Hektolitern pro Hektar. Die Trauben werden nicht entrappt, spontan vergoren und über bis zu 50 Tage eingemaischt. Der Ausbau erfolgt über 15 Monate in Barriques von denen 50% neu und 50% aus Zweitbelegung sind und der Wein wird unfiltriert und ungeschönt abgefüllt.
